verry common in greece

It is verry good boild tender with olive oil sea salt and lemone juice.it is harvested before it flowers.
Similar to Quinoa

I don't have the name anymore, but it was identified as a plant similar to Quinoa, grown for it's nutritious seeds. An Amaranth of some type.
