Scotch Thistle

Italians pick the flowers and pickle the flower (after removing the leaves and petals and cleaning it up) - it is very much like an Artichoke to eat, although tougher.

It is pasture thistle

Purple Thistle

This looks more like the Scotch Thistle. Hard to tell from the picture but the Canadian Thistle has a thin stalk and leaves where the Scotch Thistle has fat leaves and the fat round bulb for the purple flower. This is an invasive weed with a long root stem. Pull it out and dig up the root stem to kill it.
