my favorite green

it is actually one of my favorite greens to eat, and quite abundant out in the countryside of southeastern ohio. prepare the same as spinach. young leaves are tender and good in salads. larger foliage is better sauteed. a little olive oil, garlic, cider vinegar and s&p makes it quite delicious.

This is lambsquarters, a member of the spinach family, very intrusive, gives off 20000-40000 seeds that can last for years in the ground.
Leaves are very nutritious. Add to Salads and such.
